Rush, rush and then relax


Hello Tuesday fans.

It's been a day of rushing; a day of chaos; and a night of much needed relaxation. This is a short and sweet post. I was treated to a delicious bowl of homemade turkey soup and a wholewheat scone for dessert. My mom is a wonderful cook, and over the past couple of years has changed the way she eats, and makes the most amazing, healthy dishes.

We cook our soups similar, in the sense that we don't really follow a recipe - so here it is to the best of her ability to describe how she cooked up a delicious soup.

Homemade Turkey Soup

Turkey broth - broth from a big turkey - approximately 20 cups
Turkey - cooked
1 large parsnip - peeled and chopped
2 small turnips - peeled and chopped
1 sweet potato - you guessed it - peeled and chopped
6 stalks of celery - sliced
1 bag of grated carrots - approximately 2 cups
Roasted red peppers - done during the summer then frozen
Roasted tomatoes - from the summer
2 small zucchini
1 can of turkey gravy

Add everything into a large soup pot, but, the zucchini and the gravy. Simmer on low for a half hour, or when vegetables are cooked. Then add the zucchini and gray and simmer for a little longer. Season with salt and pepper along the way to taste.

And that's it! So easy, but so good.
